What did you do?

Super simple but very tasty blueberry and banana fritters.

They are egg and dairy free so fab for little’s with allergies!

– Using a fork mash two bananas
– Mix in half a cup of plain flour
– Add a handful of blueberries (I like to squash between fingers before adding)
– Add a pinch of cinnamon
– Mix together
– Heat a little oil in a frying pan
– Add a tablespoon of the mixture per fritter to pan
-Fry until golden brown on both sides

Served up on my bamboo bunny bowl.

TIP- use a thin spatula to easily get under the fritters to flip!

These are fantastic for a fuss free but exciting breakfast. Great to play around with adding different toppings! I like to warm up some peanut butter to create a sauce to pour over.

Do you have any tips for other parents?

We found having a daily routine really helped, even if it was limited to just getting out for a walk everyday!
Taking it day by day and not putting any pressure on yourself, it doesn’t matter if your child is on their 7th episode of peppa pig (opps!).

What are your children’s favourite books?

Thats not my books! Or any ‘feely’ book, Florence enjoys exploring the pages and working out which is the ‘feely’ part.

What toys would you recommend to other parents?

Baby einstein glow and discover light bar.

Its such a fab idea! So glad I found it as already spotted a lot of activities I want to give a go! What a lovely place for parents/careers to find fun stay at home activities.
