Chelsea, from Essex, sent in this great cherry and almond pancake muffin recipe. Let’s take a look at it…

What did you make?

I made cherry and almond pancake muffins.

Ingredients:
130g of plain flour or self raising (omit baking powder if you use self raising flour)
1 egg
125ml cup of milk (I used whole milk but you can use any)
1 tsp almond essence
1 tsp baking powder (only if used plain flour)
1 tbsp flakes almonds
1 handful of quartered cherries (you can use 1 tbsp of cherry jam instead if you have this)

METHOD
1. Preheat oven at 180 degrees (fan assisted) and in a mixing bowl or jug add flour.
2. Add baking powder and almond essence to flour and mix
3. Now add egg and milk and stir until smooth. Once smooth add cherries
4. Grease up your muffin tray with a little butter or oil and drop a cherry in the bottom of each section
5. Now fill each section 3/4 of the way up, and sprinkle almond and cook for 10-12 minutes.
6. Once a fork can be inserted and removed clear or slightly golden, remove and cool before serving.

I have served it on my bamboo bamboo baby plate.

I particular love serving these to Harriet as they’re free from sugar and can be given to babies as young as 6 months old. This recipe can also be adapted so easily, by removing almond and cherries and replacing with ingredients of your choice. Raspberry is another favourite of ours. I hope you enjoy it.

Do you have any tips for other parents?

Being housebound is tough, for me, I try to not worry too much about the ‘mess’. The endless toys, puzzle pieces and figurines, this stuff can wait.

What are your children’s favourite books?

Harriet loves to read the Julia Donaldson collections, in particular Zog!

What toys would you recommend to other parents?

Grapat, or any alike company, open ended toys. They can be played with for hours!
