Sophie, from Yeovil, shares the delights of home baking with us…

What did you do?

Home baking can be so much fun, especially when your friends and family get to enjoy your delights! I’ve always baked but lately it’s become much more of a hobby thanks to lockdown! You can do so much with cake these days, some of my favourites are Ferrero Rocher cupcakes, Malteaser cupcakes and of course salted caramel, these are always a winning bake! However I find when baking with my children I must lower my expectations of their asthetic qualities! 😂
So here is a simple chocolate cupcake recipe give it a go:
Ingredients
-175g unsalted butter/stork
-175g light brown sugar
-3 large eggs
-135g self raising flour
-40g cocoa powder
-1-3tbsp whole milk(if your batter seems too thick)
Buttercream ingredients:
-150g unsalted butter (not stork)
-300g icing sugar(I find silver spoon gives the best texture)
-30-50g cocoa powder(spending on how chocolatey you want your cakes I usually go with 40g)
-1-2tbsp of boiling water if you buttercream is too thick

One thing to always be mindful of is the amount you mix your batter! If you ovr mix you lose all the air you have created in your batter, this will leave them heavy and not give you the light fluffy sponge you hoped for!

Do you have any other projects planned?

I have such a list of other cupcakes and bakes I can’t wait to make, lindt cupcakes, Toblerone cupcakes and lots of yummy cheesecakes!

I’m Sophie and I’m from Yeovil, Somerset in England! I have 3 beautiful sons : Alfie-George (8), Roscoe (5) and Perran(3). They love to get involved with new creations, not to mention all the taste testing!

How are you finding being housebound so far?

Being housebound with 3 energetic boys has been a great challenge, they’ve tared around the house like whirlwind at times, but it has been great to spend so much more time with them, and helping them learn about new school subjects, I’ve even learned some Spanish myself!

Do you have any tips for other parents?

The only thing you need to remember is that you are only human and so are your children! Some days are good and some not so, and on those not so good days we all end up torturing ourselves for not doing better but WE ARE ONLY HUMAN! Let the bad days be, tomorrow is a new day!

I love the Housebound with Kids website! So many great ideas to do at home with your children, most of which mine have loved! However it’s also been nice to see there are other parents having the same struggles during lock down, and knowing I’m not alone!
