What did you do?

Baking has kept both me and my stepson sane during lockdown! The other week we made a custard cream cake (which looks impressive but my goodness was it easy!)

Ingredients and methods below for anyone who wants to wow with ease:

Ingredients:

(serves 12)
8 oz/225g caster sugar
8 oz/225g margarine
4 eggs
8 oz/225g self raising flour
2 heaped tablespoons custard powder
1 teaspoon vanilla extract

Decoration and filling:

9 oz/250g icing sugar
5 oz/140g margarine
1/2 teaspoon vanilla extract
custard creams

Method (cake):

Set oven at 180 degrees/fan 160 degrees and line 2 20cm cake tins with greaseproof paper.

1. Using an electric whisk or food mixer, mix together the margarine and sugar until light and fluffy.

2. Add the eggs one at a time, mixing each addition until combined. Add the custard powder and vanilla extract. Mix again.

3. Sift the flour and add half at a time mixing until combined.

4. Split the mixture evenly into both cake tins.

5. Place both tins on the middle shelf and bake for approximately 25 – 30 minutes, or until golden brown and a skewer comes out clean when inserted into the cake. Remove from the oven and leave to cool completely in the cake tin.

Method – filling:

1. Using an electric whisk or food mixer, whisk the margarine until light and fluffy. Sift the Icing sugar and add to the margarine in increments with vanilla extract until a smooth paste is formed. You may need to add a Tbsp of water to loosen the texture.

2. Spread some butter cream on one of the cakes and sandwich the other cake on top.

3. Spread the top of the cake with the remaining buttercream (use a piping bag if you want to be a fancy Joe)

4. Decorate the top with custard creams and Voila!

We added custard powder to our Icing first time round but this made it too sweet!

The rest worked a dream and with the recipe being a simple one kept my stepson’s attention for longer! We measured out all the ingredients too, adding some Maths and Science in with the fun of baking!

How are you finding being housebound so far?

Whilst schoolwork has been a challenge I’ve tried to look on the positive side of lockdown, and thoroughly enjoyed the opportunity to spend quality time with my husband and stepson.

Do it your way! There’s no right or wrong – every family is different.
