What did you make?

Healthy oat bars with added peach and raspberry – perfect for little ones just starting out with solids. Make the most of summer fruit.

Ingredients:

1/2 Cup blitz rolled oats
1/2 Banana
1/2 Cup milk
1 tbsp ground flax seed/chia seed; use one of combination
Peach slices
Raspberries

In a shallow microwavable bowl – one that will hold about 2 Cups – mash the banana well and stir with the oats, milk and seeds.
Let it stand for a few minutes.
Dot the top with peach slices (3-4) and raspberries (5-6) and poke into the mixture.
Microwave on high for 5 minutes.
The bars firm up as they cool
Serve with extra peach and raspberries and some thick Greek yogurt for dipping.

Nice variation with tart raspberries, not too sweet. The addition of Chia seeds ups the iron and fiber content.
I liked to eat these with my little one – it was the first breakfast we shared together. I loaded a bowl with yogurt, oats, nuts and more seeds for myself and added some of the bars to the top.
Will keep covered in the refrigerator for up to one day.

I’m a first time Mammy of 8 months. I currently live in Seattle with my husband (who is from Spain) and my daughter but I’m originally from Sunderland. I moved to New York 7 years ago and moved out west in 2017. I feel very far away from family!!

Do you have any tips for other parents?

My little one is only 8 months so we’re still figuring stuff out. I’ve really enjoyed doing The Little Gym UK from YouTube – it was nice to have my daughter hear some English Accents!

What are your family’s favourite board game(s)/card game(s)?

My husband and I like Risk!

What are your children’s favourite books?

Crinkle books are life right now but I’m also enjoying reading the classics to her – The Hungry Caterpillar is a firm favourite.

What toys would you recommend to other parents?

The game of cups! Stack em, knock em down, back up, bang them together trow them around, bang them on things!! The game of cups seems endless.
