Chelsey, from Oxfordshire, sent in this great breakfast recipe. Let’s take a look at it…

What did you make?

I made Porridge Cups.

These got VERY messy but my little one absolutely loved them! I made these last night as they needed to chill in the fridge before cooking for a while – but it meant breakfast was super quick and easy this morning!

Ingredients:
1 banana, mashed
100g porridge oats
1 TBSP honey (swap for maple syrup for under 1s)
1 TSP chia seeds
1 TSP ground cinnamon

Method:
1. Grease your muffin tray with a little oil/butter.
2. Mix together your mashed banana and oats, add in your honey, chia seeds and cinnamon and mix until well combined.
3. Spoon around 2 TBSP of mixture into each muffin hole, flatten and then push the mixture up the sides of the tray to create a cup shape – make sure you don’t have any holes!
4. Allow to chill in the fridge for 1 hour
5. Preheat oven to 180c and pop into the oven for 12-15 minutes, they will still feel slightly soft but able to hold their shape.
6. Allow to cool, pop out of your tin and fill with whatever you like! We used Greek yoghurt and fresh fruit to fill ours!

Served on a bamboo plate
