What did you do?

This recipe makes around 9 pancakes using a 6″ pan.

270g plain flour
2tsp baking powder
4tbsp caster (or granulated) sugar
1tsp salt
2 eggs
4tbsp melted butter
270mls milk
Food colouring. I use the Wilton gel colours for baking as they retain their vibrancy after cooking

Mix together all the dry ingredients
– In a separate bowl/jug whisk together the milk, eggs and melted butter
– Add the wet ingredients to the dry ingredients and mix. You may need to add more milk to get the correct batter consistency (yoghurt like)
– Separate into 7 bowls and add a little bit of food colouring and mix
– Cook each colour individually in a hot pan, on gentle heat) using a little bit of butter/oil and stack
– Top with syrup and any other fruit/cream/topping you want!
