Renna, from Birmingham UK, shares how to make some tasty french toast. Let’s give it a taste…

What did you make?

This is a very easy breakfast idea for your little one and you can even get them involved!

Crack 2 eggs into a bowl and add around 30mls of milk (any milk of your choice) you can also alter the amount of milk you use and eggs depending on how many people are eating or how strong you like your french toast!

Add 1/2 teaspoon of cinnamon to the mix but again this can be altered to taste it’s better to start with less as cinnamon is quite a harsh taste and not for all kiddies!

I then do the same with 1/2 tsp of nutmeg (again this is up to you but it does add gorgeous flavour!)

I whisk this all together in a large bowl that is wide enough or dip strips of bread.

If your child is a crust free kinda kid then cut these off and cut the bread into strips, you can alter size if you wish but I tend to leave it as it is and cut it up once it is cooked if I need to.

I then soaked each side of the toast in the mixture until it was totally saturated.

Next, I used some fry light in a pan and placed the pieces of bread in the pan to fry.

Once the bread was toasted/fried I then grabbed a large handful of blueberries and placed them in a small frying pan with 2/3 tablespoons of water and fried gently together till blueberries were softer and created a Blueberry jus with the water.

When plating I popped the blueberries on top of the toast to serve.

This literally takes minutes and is a super easy fun idea! You can change up toppings and flavours to suit!

The blueberries are so tasty with the cinnamon and nutmeg however be careful with cinnamon some kiddies really don’t like it and then that’s your toast ruined!

Do you have any other projects planned?

I’m constantly trying out new recipes for my 10 month old, he had pretty bad reflux so we were unable to try traditional purées as they just came back up! So we started baby-led weaning pretty young. My next project will be different flavoured savoury muffins as these are so easy to take on picnics and healthy!

How are you finding being housebound so far?

Due to covid I went back to work later than planned so I spent a lot of time indoors with my son and not integrating with other babies. It was so hard and I constantly worried he was not getting the enrichment that he needed to develop and learn. The hardest part of being housebound was the guilt of am I doing enough? Is he happy? But eventually, you get over it and do the best you can!

Do you have any tips for other parents?

Remember everything is temporary, whether it’s night time wake ups, tantrums, food refusals, nap avoidance or endless crying. It does stop and things do eventually go back to normal. This is how I stayed sane! I also reminded my self my son only needs a warm home, love, food and interaction to be happy.
