What did you do?

This is my take on a deconstructed baked potato with the fixins. Crispy roasted garlic potatoes topped with a drizzle of garlic aioli, shredded cheddar, chopped chives, salt and pepper.

Next time add more oil to the sheet pan to get the potatoes super crispy. I tossed with oil and salt before placing on the pan, but should also add to the pan. Oven temperature should be set at 450F.

Lisa: with three grown children aged 27, 25, 24 and two live at home. We enjoy family dinners at home or summers by the lake at our family cottage. This is when I cook for a crowd and try to find easy, quick recipe ideas to be enjoyed.

How are you finding being housebound so far?

It’s a lot of us working on laptops side by side. Gets a bit crowded and challenging during conference calls! We have spent a lot of great family time doing puzzles, games, walks and watching TV.

Do you have any tips for other parents?

Try to focus on the positive. It can be stressful l, so make sure to do something every day that’s just for you. Get into bed and read for 30 min or take a bath or sit in the backyard with a glass of wine. Take some time for yourself.
