What did you make?

If you want to really impress your family and friends but don’t want to spend much time whipping something together, then this dessert is seriously THE thing to make.

This is a super easy recipe for a no bake cheesecake with meringue and berries. You can get the family involved in making this fun recipe that can be whipped up in no time without worrying about a huge clean up afterwards.

This made 3 small portions for me, but you can double the ingredients for bigger portions.

Ingredients:
150ml double cream,
100g cream cheese,
2 tspn icing sugar,
Berries (your choice)
2 digestive biscuits,
Meringues (I used ready made ones from Sainsbury’s but you can get them anywhere).

Method:
Firstly in a food processing or using a fork mash up some berries, I used strawberries & raspberries, I also like mine with some chunks.
In a bowl add your cream cheese, double cream and sugar and whisk until you have soft peaks, then fold in most of your berries.
Assemble this mixture into your dishes, crumble in the meringue and digestives on top and drizzle with a little of the remaining berries.
Serve cold, totally delish.
