What did you make?

I made Peppermint chocolate slices

Ingredients: 
Base:

225g plain flour
200g butter
40g cocoa powder
140g caster sugar

Filling:
250g powdered icing sugar
6 drops of green gel food colouring (optional)
1 tspn peppermint flavouring
5 tblsp milk (varies)

Top layer:
200g milk chocolate
10g butter


Super simple peppermint chocolate slices…if you dont like peppermint then strawberry flavouring also tastes yummy! – approx 65.6g carbs per 100g. This will vary due to types of ingredients used e.g chocolate variations.

Method:
Line a square 8″ tin with greaseproof paper (or similar sized tin) .

Bring all the base ingredients together to form a soft ball. Spread and push the mixture in the bottom of the lined tin. Chill this in the fridge for around 20 mins. Meanwhile heat the oven to 180°c (fan).

Bake in the oven for about 20 mins. Take out and leave in the tin to cool.

Once cooled, mix the peppermint filling and spread on top if the base. Leave this to set.

Once set, melt the chocolate and butter and spread this on top. Again leave to set.
Cut and enjoy!

How are you finding being housebound so far?

At first it was scary, with uncertainty and home schooling but now it’s not so bad. I have found lots to do and having quality time with the kids.
